Recipe: Spinach, Sweet Pepper, and Onion Frittata


 

Ingredients:

  • 8 Eggs
  • 1.5 cups of spinach
  • 1 cup of sweet peppers, diced
  • 1 onion, diced
  • salt and pepper to taste
  • garlic powder (optional)
  • Cheese (optional – I did not add cheese to mine)

Directions:

  • Preheat Oven to 350 degrees
  • Spray a glass baking pan with Pam Cooking Spray
  • Add spinach, onion, sweet peppers to the baking pan
  • whisk the 8 eggs and spices until completely combined
  • add the egg mixture to the cooking pan
  • Place in oven for 25 – 30 minutes checking regularly
  • When the center of the pan is solid (eggs aren’t jiggly) the Frittata is done

  1. Super easy and super Paleo :)
    I like to do this but put them into a cupcake tin instead of one big bake. You can freeze what you don’t eat right away, and easily pack a couple for work breakfasts!
