Ingredients:
- 8 Eggs
- 1.5 cups of spinach
- 1 cup of sweet peppers, diced
- 1 onion, diced
- salt and pepper to taste
- garlic powder (optional)
- Cheese (optional – I did not add cheese to mine)
Directions:
- Preheat Oven to 350 degrees
- Spray a glass baking pan with Pam Cooking Spray
- Add spinach, onion, sweet peppers to the baking pan
- whisk the 8 eggs and spices until completely combined
- add the egg mixture to the cooking pan
- Place in oven for 25 – 30 minutes checking regularly
- When the center of the pan is solid (eggs aren’t jiggly) the Frittata is done

Super easy and super Paleo
I like to do this but put them into a cupcake tin instead of one big bake. You can freeze what you don’t eat right away, and easily pack a couple for work breakfasts!

Great way to plan ahead! I cook up all my egg things and chicken breasts, etc for the week Sunday night.. then no stress/no hassle during the week!
